Low Fat Chicken Quesadillas (5.5 Grams of Fat for the Whole Recipe)
Ingredients:
1 X-Large Thinly Sliced Scallion with the Chive Ends Included (Or Several Small)
1 Tablespoon Publix or Breakstone's Fat Free Sour Cream
1/2 Tablespoon Light Butter or Fat Free Cooking Spray
Salt and Pepper to Taste
Topping:
1 Cup Publix or Breakstone's Fat Free Sour Cream
1 Cup Fat Free Black Bean Corn Salsa (I am still tasting brands for best quality-Needless to Say Some Are Better Than Others...Use Your Favorite For Now)
or Fat Free Taco Bell Mild or Hot Restaurant Sauce
Directions:
There are Quite a Few Ingredient to Make This a ROCK STAR Recipe So I Get All The Ingredients Out on the Counter to Make it Easier First
Take a 6oz Bag of John Souls Chicken Strips and Place it in a Covered Dish
You Might Want to Cut The strips Evenly for Better Cooking
Take a Tablespoon or Two of Diced Jalapenos and Mix Thoroughly
Salt and Pepper Chicken to Taste and Set Aside
Take Two Tortilla Shells and Place them on Two Separate Plates
Spread Your Favorite Refried Beans onto One Side
Cut Thin Slices of Scallion and Set Aside
Cook Covered Chicken in the Microwave for One Minute
Mix in 1 Tablespoon of Sour Cream to the Chicken & Coat the Chicken -I do this in order to Keep the Chicken Moist through the Cooking Process
Add a Handful of Fat Free Cheddar Cheese, Mix & Microwave Another 30 Seconds
Remove From Microwave, Mix Thoroughly and Spread Evenly onto Tortilla
I Add Additional Black Pepper at This Point
And I Add Another Layer of Shredded Cheese
Finally I Sprinkle on the Sliced Scallions and Some of the Green Chive Before I Place the Second Tortilla on Top Sandwhich Style
Cover the One Plate with the Other to Create a Dome and Place Back Into Microwave (Set Aside so the Flavors Can Marinate for a Few Minutes)
Take 1/4 Tablespoon Light Butter and Heat on a Skillet until it Melts
While Butter is Melting Microwave Covered Chicken Quesadilla for One Minute
Place Heated Quesadilla onto Hot Skillet and Cook on Medium High for Two Minutes Each Side Until Golden Brown (Make Sure You Move Tortilla Around a Bit to Coat the Entire Surface with That Melted Butter)
You May Want to Spread the other 1/4 Tablespoon of Light Butter on the Tortilla Top Before You Flip It...Unless You are Using Two Pans

Once Golden Brown on Both Sides Flip Onto Plate and Let Set for 2 Minutes
Cut Into Four Pieces Scoop on Your Toppings and Enjoy

These are Quite Filling. One Quesadilla Could Feed Four with a Side of Veggies. You Can Heat them Up for Later but Unless You Heat it in a Skillet They Will be a Little Mushy in the Microwave (Sill Good Taste)
You get Better at Making These Every Time...I Used to Need Two Pans at First...Now I Use a Large Spatula and a Flat Pan...and Flip
**The Only Fat in this Recipe is in the Chicken 6oz Chicken=2.5 Fat Grams and the Light Butter 1/2 Tablespoon= 3 Fat grams
Total 5.5 Grams of Fat for the WHOLE Quesadilla...Beat that Fat
