Low Fat Chicken-Arugula Pita


Low Fat Chicken & Arugula Pita w/ Lemon Balsamic Vinaigrette 

Dressing:
Almost 1/2 Squeezed Fresh Lemon
1 Tablespoon or so Aged Balsamic Vinegar
Salt and Pepper to Taste

Ingredients:
3-6-8 oz John Soules Fully Cooked Chicken Fajita Strips (1-2.5 Grams of Fat)
1 Toufayan Onion Pita  (.5 Grams of Fat)
2 Cups Arugula (De-stemmed)
Handful of Shredded Carrots
1 X-Large Scallion
3 Tomato Wedges
1/4 Tablespoon of Light Butter (1.5 Grams of Fat)

Topping:
Drizzle the Last Bit of the 1/2 Lemon

Directions:
1. Cut Chicken up to Even Strips and Place on a Plate in Microwave with Cover on Top
2. Place Arugula in a Strainer on a Plate
3. Add Shredded Carrots to the Salad
4. Cut Both the White Part of the Scallion and the Chive into the Salad
5. Take the Three Tomato Wedges and Place them Under the Strainer on the Plate, Salt and Pepper them to Taste (Placing them Under the Strainer While Preparing the Salad will Allow the Lemon and Balsamic to Lightly Strain Over Them)
6. Take the 1/4 Tablespoon of Light Butter and let it begin to Melt in a Pan on Med-High
7. Once the Butter is Melted take the Pita and Make sure it is Evenly Buttered on Both Sides by Spreading it around the Pan with your Hand (The is a bit of Magic in this...you want to get a nice brown on the Pita and you need the Butter to do that...but you do NOT want more fat so use the butter Sparingly and Lightly...I use my hands to coat the melted Butter and Spread it Around Thinly using only 1.5 grams of Fat)
8. Allow Pita to Cook for 2-3 Minutes Until Golden Brown on One Side
9. While that is Cooking, Drizzle the Lemon and Aged Balsamic Over the Salad
10. Salt and Pepper the Salad to Taste
11. Flip the Pita...it will only Require 1 Minute to Cook on the Other Side
12. So hit the Microwave for 1 Minute to Heat the Chicken
13. Take Pita off Grill Pan Onto a Plate and Place the 3 Tomato Wedges Across the Cooked Pita
14. Take the Chicken out of the Microwave and Mix Well with Salad
15. Place Chicken and Salad onto the Pita
16. Drizzle with More Lemon (not too much)
17. Sprinkle on Parmesan Topping and Hear the Flavor Angels Sing "YUM"

Dealio:
DO NOT use too Much Lemon or Vinegar...it is Suppose to be light Flavor so all the Fresh Ingredients can Shine.
Only 4.5 Grams of Fat Even if you Use the Whole 8 Ounces of Chicken
