No Fat Cauliflower Mash


Fat Free Silky Cauliflower Mash

Ingredients:
One head of cauliflower makes four small servings
3 small-medium cloves of fresh peeled garlic
Fresh black pepper
Sea salt

Directions:
Cut a head of cauliflower into one-inch cubes and steam with 3 cloves of fresh peeled garlic until extremely fork tender. Add strained cauliflower and steamed garlic to blender with 4 tablespoons of Philadelphia Fat Free cream cheese and one cup of Breakstone's Fat Free cottage cheese; add freshly ground black pepper and sea salt. Puree on high speed until silky.

Dealio:
Ingredient portions may vary based on size of cauliflower and then based on your taste. Cannot have too much garlic for me, but you may not want garlic to linger on through the eve and out of your pores (funny).

Variations:
+Add Kraft Fat Free cheddar cheese for a different taste
+Add Breakstone's or Publix Fat Free sour cream for a different taste
+Roast the garlic and add fresh rosemary for a different taste
+Roast the garlic and add caramelized onions for a different taste
+Top off with paprika, parsley, chive or green onion for garnish
+Add Fat Free buttermilk for a different taste
+Freshen it up with lemon or lime
+Add horseradish (yuck) for a different taste
+Spice it up with chili powder or cayenne pepper

Benefits:
Cauliflower is another cruciferous vegetable, like kale and other greens, or broccoli, which is essential in a Balanced Diet. It is a natural hormone balancer and detoxifier. As a replacement for mashed potatoes, cauliflower mashed potatoes are a low-carb Fat Free food. In addition, Garlic is one of nature's wonder foods and is rich in antioxidants and healthy phytochemicals. Moreover, the cottage cheese and cream cheese are great sources of calcium and protein enriched. BTW, this recipe is quick and convenient as well.

Nutrition:
Fat Free, with 60% protein (school is out...some experts do say cauliflower does have a tiny amount of Fat...most say it is Fat Free...never met one soul that gained weight eating Cauliflower...just sayin')
